Here is what Baofeng support said when I asked.

"When using the frequency hopping function, your transmit signal undergoes the following process:
Initial Frequency: You may set it to 146.5200 MHz or 156.5750 MHz, but this is just the starting frequency.
Frequency Hopping: The system rapidly switches between multiple frequencies.
For example, it might transmit for a short duration on 146.5200 MHz, then jump to 147.0000 MHz, and then to 156.5750 MHz.
Interference Resistance: Because the signal quickly hops between different frequencies, it is less susceptible to interference or eavesdropping.
Synchronization: The transmitter and receiver must be synchronized to ensure both are communicating on the same hopping sequence.
Summary
Your signal will be transmitted in a rapid hopping manner across different frequencies, enhancing the reliability and security of the communication.
