So I searched both google and here but no one seems to really even mention it.

What is CALLID?  Every GMRS radio I have used so far, BaoFeng, Radioddity, Retevis all have a menu item called CALLID and sometimes it is 80808 by default, sometimes it changes to 12345 once I write channels to it, but what is it? What is the significance of that number and how can I use it productively?

For baofeng and other CCR's its a DTMF identifier code that is fired off every time you key up. If other radios are programed with your callID number and name they will see your name pop up on screen when you talk. If not, it'll show the number your radio transmitted.

The downside of DTMF ID's is that they take a little bit to transmit, meaning youll have to wait a few seconds before talking or nobody will hear the first part of your traffic.

Motorola, Icom, and Kenwood have a different system called MDC1200, (Kenwood also has fleetsync) which in my opinion is a bit faster. MDC and Fleetsync also give you direct radio call (Allows you to ping a specific radio, alerting its user you are trying to call them) and also simple messaging.

I want to say some of my vertex stuff has mdc1200 as well (evx 539, and vx924...part 90 stuff)

Be aware too that if you turn the feature on you likely have settings for choosing if the are sent when you press PTT, release PTT or both. Also, your radio may have a feature for turning on sidetones on so that you can hear these tones as they are being sent out. This can be helpful to let you know when it is clear to start talking.
