They have to do with linking.  They have been talked about a lot over the years.  I quick search up top returns many old and recent threads on them.  Since linking is not allowed i don’t think they have a place in gmrs.  But some one may have found a simplex use for them in some way?

Correct, a node will need Internet in some form, be it cellular or otherwise. While the mygmrs network was not straight Allstar (which is used in the amateur space), it functions similarly. I grabbed this description from the wiki on allstarlink.org, which I think covers it pretty well

What is a node?

A node, in simplest terms, is a computer that connects to the AllStarLink network. Nodes typically have an RF radio interface as well as an internet connection. Radios can range in size from a repeater radio to a low power radio integrated into a node. A node allows you to connect to other nodes in the AllStarLink network.

Nodes take the form of an inexpensive Raspberry Pi computer or a PC running the Linux operating system.

A node is simply a unique point that’s identifiable in some way.  Applied to GMRS it’s a unique location on a network of some kind.  The node identifier makes it possible to address the node individually. Because networking GMRS stations has been more strongly interpreted as prohibited by the FCC, nodes may no longer have usefulness.

Not GMRS related, but for explanation, nodes allow for repeater linking.  In South Carolina, the SCHEART network consists of 34 repeaters that I can link together from my HT or mobile using the node # assigned to that repeater. Which is nice since I'm in Greenville and want to contact someone in Charleston, I can link the repeaters together, make contact, then remove the link.
