Welcome aboard! I just got my license on Friday and can say that I've had issues with my first radio so far, but I've learned so much from this community already! This is an amazing resource for GMRS!

Actually there’s nothing wrong with you transmitting to the repeater and listening on your UV5R. It’s totally within the rules and if anyone tells you otherwise they’re full of it.
But transmitting on one radio and listening on another right next to it doesn’t always work because the receiving radio “desenses”, which means it is swamped by the stronger signal and fails to reproduce it. That’s especially true for inexpensive radios.

You should be able to here from the repeater on your UV-5R, no tone needed to listen. It may be your radios are to close to eachother though. desensing can happen when radios are close to eachother causing one not to receive transmissions. Try moving them further apart like fifty feet or so.

WRYF792 got a reaction from wayoverthere in AnyTone AT-D878UV II Plus GMRS?
I went with my girlfriends dad to a local ham radio outlet because I got him interested in ham and GMRS. This anytone was one of 4 ht's they had they were selling as GMRS. My issue was 100% user error. It was setup with 3 beeps before transmitting, so I assumed this meant it was blocking me out from transmitting. User error is a killer for me!

However, it was stupid how they shipped the radio with a total menu lock that per the manual, can only be disabled by programming the radio. Which gave me trouble because I wasn’t even able to disable this without updating the firmware first. I love the radio and I’d love to get one for myself, but that factory lockout is really annoying. Especially when you’re not expecting it!

This didn't help my issue, I tried it last night and it was the same as using he "V/M" button on the radio, still locked me out of GMRS. I came across somebody who has also had this issue in the past, which provided instructions from AnyTone that did help solve the issue I had.

Our Zello channel is linked to our Southern California repeater -both the Zello and the repeater are open for any licensed GMRS user to use.. Zello channel is named 'Notarubicon GMRS 700 Repeater' .. https://zello.com/NAR700
Almost 5,000 Zello users are approved/subscribed to use this channel but most are extremely shy and never talk/transmit.  We also just changed frequencies on the repeater so its a bit quite right now while everyone figures out that its changed.

This is roughly the setup I use on my Sienna so I can fit in the garage. In order to connect this to your HT you would also need the adapter. This is certainly not the only setup you could use, I'm sure others will chime in. This, as I like I say about instruction manuals,  is just how one guy does it.

You can also do this with their proprietary programming software.  Connect the DB20 (G or UV) to your computer, open the software, read from the radio. In the software's menu, click on "Model", and then "Model Information".  It'll let you choose which mode you want to use the transceiver in.  As stated earlier in the thread, each time you change modes (Frequencys) it will wipe all programming and memory channels, so back up your data first.

It is Version 2.30 - I just attempted the update from this post and I am now able to transmit on GMRS frequencies! I should note that at first it did not work, but then I turned the radio off, changed the mode in the V/M menu and now it works fine as far as I can tell! Now to figure out this repeater programming!

Took some looking, but I found this in an older thread...looks like you switch it to the range you want, turn if off, then turn back on normally.
It does also look like (at least in some firmware) that the tones may be locked out in the menu in gmrs mode

The AT-779 UV is a bit confusing. I have owned many Anytone radios for many years, and I find them to be responsive to customer requests (provided they get those requests there in China). I bought an AT-779UV a few months ago and it was configured for GMRS operation, where I wanted to use it. Channels 1-22 were as expected, along with repeater offset channels 23-30. Also, the U.S. weather channels were programmed into the last 7 channels (ch. 494-500). No TX outside of the GMRS frequencies, and not all menu options were available via the menu. Notably, the option to switch from Narrow band audio to Wide band audio was not available, nor was the option to add/change a sub audible tone.
This is fine for many users, but I bought this radio specifically to install in my wife’s car, and only want to have our repeater frequency programmed in, to make life simple for her. I had to download the programming software from Anytone.net (navigate to their download center) in order to switch the audio bandwidth from narrow to wide and add the required tone.
The second issue I ran into was that you cannot delete GMRS channels, and I did not want to have 30 channels programmed into the radio, since I only need one channel in there. This required me to download the other piece of software on Anytone’s site labeled AT-779UV SetO(V2.0). This software allows you to change the configuration of the radio (as does the power on button sequence) and I had to change to a frequency configuration (400-470/136-174) in order to be able to delete unneeded channels and just program the repeater frequency needed. It is now a one channel radio that I needed, but I suspect some will say it is now not valid under Part 95E, even though I am only running one GMRS repeater frequency in the radio... whatever. I tried to do it the way it was meant to, but that doesn’t work for my situation. It is exactly the same as running under the GMRS configuration...minus the additional GMRS channels.
Some time later, I received an email from the seller indicating a new firmware version was available for the AT-779UV, along with a link to the download. I will include the email text below. I performed the firmware update and now other menu options (including the selection from Narrow to Wide and tone) are available in the GMRS-only configuration. A nice upgrade. It does seem this upgrade does eliminate the power up button sequence to select different configurations (I don’t care, as stated previously, doing that wipes your memories), and the other software mentioned gives you that access anyway, so if that function is eliminated with the new firmware, it doesn’t impact me.
As far as the radio in concerned, I like it very much. I was first licensed for GMRS in 2003 (let it expire in 2013, and got another license when the price dropped from $90 to $70 a few years ago), and I have run a lot of commercial radios over the years. While these Chinese radios are not of the same overall build quality, the Anytone radios are quite good. I have several Anytone radios for amateur use and they have worked well, and Anytone has put out firmware updates to correct issues or add features. I tried the Midland MXT-275 for my wife’s car, but the narrowband audio was too low for our repeater use. The AT-779UV is nearly the same size as the MXT-275, and honestly easier to use for her needs, with only having one channel in the radio.
The transmit output measures about 19 watts out with one of those Amazon-sold Surecom SWR/power meters, and I have a Tram 1174 antenna on the trunk lip. Previously ran a Laird  ETRA 4503 phantom antenna on there, and it did ok for a 4” antenna, but the 1174 helps out with the challenging terrain around here. It is literally like a roller coaster ride with all the hills and valleys. so the 10” Tram (trimmed for 467/462) fills in some of the dips and valleys better. Because the terrain is so rolling and varied, the AT-779UV/Tram 1174 combo works nearly as well as my 50 watt capable mobile/Comet CA 2X4SR combo in my truck. As always, your mileage may vary...literally.

    edit...
here is the email text from the seller regarding the firmware. I tried to attach to the post, but the link was apparently not available.

No, it doesn't apply across all the channels like that. in my case, there are two repeaters on .575 (ch 16).  On the midland, i usually had the tone set for the closer repeater (Auberry), but if i wanted to use the other that's on the same frequency (Central1), i'd have to either look up or remember the code number for the correct tone for that one, and set it in the menu.
when i moved to the Btech GMRS 50x1. the situation was similar, but without the codes, that lets you choose the tones directly), since the hard coded 30 channels in that are all you get for transmit, and anything else you program is receive only. (i hear they've made the GMRS50v2 a bit more flexible).
For my current radios (anytone at779uv, vertex vx4207), they're a lot more flexible about what you can program, so I can have whatever combination of frequency and tone desired for each memory preset/channel.  I programmed preset channels for Auberry and Central1, each with the appropriate tone, so instead of having to go into the menu and change tones, i just switch to the desired memory channel.  I also have a ham system near me that operates similar to the SWCRS setup, where using one tone repeats at that repeater only, and a second repeats across the linked system, so i have memory channels that are C15-Local (which uses the local tone) and C15-Link (which uses the tone to repeat across the whole system).
On the size comparison, i snapped some pictures awhile ago of the midland and anytone side by side, if that helps.

If you're within the return window, that's definitely a viable option. There's a number of users (myself included) that have been happy with the anytone at779uv/radioddity db20g/retevis ra25 triplets; it's around the same size physically, and a little less expensive. The software is a little limited though, but usable.
On the manual, at least for me not being super familiar with specific radios (or in this case, a newer model), i'll refer to the manual too to have a better idea what menu options to look for.
On the tones, it does look like it has options to set transmit (tC) and receive (rC) tones separately, at least based on the manual. On the downside, it doesn't offer an option to have 2 copies of the channel (one with the local tone and one with the link tone), so it'd be changing tones in the menu to switch (which does sound like a pain).
I have a couple repeaters locally that are both on .575, but with different tones..on the Midland I'd have to remember the code to change tones depending which I wanted to use. Next radio didn't allow programming more TX channels, but it at least used tones instead of codes. Current radios, I have a present for each with the appropriate tones set.

You have come to the right place if you have specific questions. There is a lot of knowledge in these hallowed halls. However, as with every corner of the interwebs, you will get good answers, correct answers, and opinions on things you didn't ask. The key is to be able to differentiate between them all.

The Shaw Butte repeater is linked with the Southwest Community Radio System (SWCRS) network of other repeaters throughout Arizona, New Mexico, Texas, Colorado, and I think Utah. The Shaw Butte repeater has two access modes, one for the local mode only, no link to the network; and one for the network mode to link up with the other linked repeaters.
The linked repeaters in Arizona are Shaw Butte, Towers 600, Mt Elden, Diamond Point, Greens Peak, Pinal, Mt. Lemmon, and others. The DPL code is for the linked network access and the local mode requires the CTCSS/ PL of 100.0 Hz. There is no tone on the downlink side.
If you want to communicate with other stations near the other repeaters both stations would have to access the respective repeaters with the link tones. Also, if you want to participate in the Sunday and Wednesday Nets, you'll have to access the network with the link tones.
