I'm not sure what your overly-pedantic point is?  are you saying that the FCC IDs and certifications are meaningless and do not matter? Please clarify so we all can understand if we should ignore the FCC IDs and certifications or not.

Finally got everything in and some good weather to get up on the roof.  Before I tore everything down I went ahead and tested the current setup.  Up at the antenna after running through the 10' coax from the radio to the arrester, then from there to the antenna via a 50' coax, my SWR was reading at about 1.46 and wattage indeed cut in half as Steve suggested it might.  Read at 25.23W.  After running the new M&P (a 9' and a 50') and the new Comet antenna, SWR is about 1.44 and the wattage was 33.0W.  Definitely able to hit the repeater I'm trying to get to.  Able to hear folks responding to my callout--albeit with static.  But I could hear it.  I think at this point geography is the limiting factor but I can live with that.

Shaking Elvis's hand would be icky considering how long he's been cold.  Meeting him would be even worse, because that would mean I was with him.  Not sure if Randy has been complimented or insulted.

This is 100% by design, and as it should be, and it is not intended to be the same as the 5G, which uses a totally different kind of screen.  The user manual unlocks the mysteries of how to set the different screen settings, it is highly suggested reading.

Anything by Comet, Browning or Diamond.  In reality you could even use a Nagoya. Don't use RG8 coax that you have on your VHF, 65cm UHF doesn't propagate thru RG8 as well as VHF does.  Look for LMR-400 or equivalent.
Marine band 156mhz (1.9 meter) is almost in the 2 meter ham VHF band, GMRS is 65cm is the next door neighbor of ham 70cm.  A dual band 2 meter/70cm ham antenna won't be PERFECT but likely close enough for both radios to be compatible.  My 2m/1.25m/70cm Comet tests pretty good for GMRS on a SWR meter and nanoNVA, well under 1.3:1 across GMRS.

I have been able to tilt my HT far enough out of polarization to have my signal go from full readable to barely readable when in contact with a repeater 20 miles away.   Also whether the ISS repeater was readable or not (yes, with a regular verticle on a HT).

and just so everyone knows, the newer UV-5Rs do not suffer from the horrible deadly spurious emissions/"dirty transmitters" like the early models that you referenced.

Incorrect.. If the (factory) box says "GMRS Compatible" as stated by the OP (and it was not written in crayon) then it is the GMRS version, which is FCC Part 95 approved for use on GMRS meaning they are perfectly legal and within FCC guidelines to transmit on GMRS with.

Have been using SDR's for a long while now, as well as software defined military radios. Wat made me break into the amateur side was finding out that Icom was supplying the first few "black box" receivers for the Predator (RQ-1, surveillance only, no Hellfire missiles back then) fleet. The civilian versions of the PCR-1000 had some issues, like being able to be opened up like those purchased for military/export use.
Now, like others have mentioned, I monitor my own networks with SDR receivers, and the HackRF is better than the cheaper USB versions, but it is so easy to just carry along a small USB/antenna and listen to what is nearby. For portability, I used a re-purposed Hinge Health Amazon Fire tablet and SDR# with USB dongle. For the money, great combination and makes the tablet useful again. My newest "scanner" would be a Uniden BCT-15X (possibly a handheld Uniden floating around somewhere), as the SDR USB sticks are on every older computer now, doing something at some point.

Comet makes nice antennas. M&P cables are excellent. I haven’t tried the Airborne. It’s lighter in weight than their Ultraflex or Hyperflex because it uses copper clad aluminum as the center conductor (exactly like LMR400).

It shouldn't.. .but, that is no guarantee..
I have one of the cheapest wifi-cameras you can buy mounted on my Jeep's 3rd brake-light/license plate bracket, and my antenna is mounted about a foot away above the passenger side brake-light (see image) - i've never suffered any interference.

An expanded metal rack makes a pretty good ground plain for the Comet 2x4SR antenna. Here is a photo of the rear rack on my Honda Pioneer 500. I have the antenna set in the center of the rack.

Here is a phot of the rack before installing the antenna.

If you want APRS, get an amateur license and quit trying to make GMRS into something it wasn't meant to be.

All you people wanting to turn GMRS into a clone of amateur radio need to just get their licenses.
