Is this even doable?
Nobody can answer that with any accuracy more than "maybe".. The only way to know is to try it.
If you can't reach them, then next step before base setups would be by connecting both radios to mobile-antennas on a cookie-sheet and put them in a high-up window.. This will greatly extend the fars. -

Do the TID H3's or H8's program easier, using Bluetooth
They seem to work pretty much the same.

4 days and 83 replies later, are Midland radios good?
- Yes for many people
- No for many people.
The moral of the story is: Buy what best suits your wants, needs, and desires in a radio, and don't worry about what other people prefer.

Now the FCC's can be a lot faster and more streamlined at doing nothing.
If the FCC's gave one fart about enforcement they would do something.....HOW DARE YOU SIR!! Any lack of enforcement is not the fault of the FCCs!! It is obviously the fault of some guy on Youtube daring to point out the fact that the FCCs don't care/does nothing to enforce the H.A.M., CB, or GMRS rules!!!1

Am I over-thinking all of this
Yes, you are over thinking it... Unless your goal is to bounce your signal off the moon or "make contacts" with anonymous men around the world - in either case, you should not be using GMRS for that and would be happier with H.A.M. or the Grindr app.
It is true that if you CORRECTLY attach a wire from the antenna to the chassis it will be grounded better, you will never notice any difference. OTOH, if you do it wrong and short it out, you WILL notice when it doesnt work at all.Stop paying attention to the radiotards that have no life, install the radio, and enjoy it.

it's totally and utterly foolish and breaks every terrestrial and celestial bounds of human stupidity relying on these cheap meters as I've found them to be off anywhere between 10 to 20 percent off
I have tested several against my RigExpert AA-650 and they always come in within ~1%-5% .. Weird.

so,.. you’re saying I passed the sad ham exam, before even taking the ham exam.
Being a sad-H.A.M. is a mental/emotional-defect, not a test score/status. And while there is a very high correlation of sad-H.A.M.s having H.A.M. licenses, this does not prove causation.

As @Sshannon eluded to, only you can answer that question.
